peanut butter sesame seed granola bars

A new favorite.

We will just go ahead and skip the chit chat so we can get right to the recipe.

Peanut Butter Sesame Seed Granola Bars

In the mix::

  • 1/3 cup oats
  • 1/3 cup unsweetened coconut flakes
  • 1/4 cup peanuts
  • 1/4 cup cashews
  • 1/4 cup sunflower seeds
  • 2/3 cup sesame seeds - rinsed (do you have to rinse sesame seeds?)
  • 4 T ground flax
  • 1/3 cup honey - use maple syrup for a vegan version
  • 1/3 cup peanut butter - homemade is always best!

In a food processor, pulse the oats and coconut flakes until finely ground. Remove to a bowl. Then pulse the peanuts and cashews until roughly chopped. Add to oatmeal/coconut mixture. Stir in sunflower seeds and flax.

Toast your sesame seeds.  I rinsed mine first, which I am not sure is necessary or not. Toast sesame seeds in a skillet over medium heat. Keep a close eye on them, stirring often, and remove to oat mixture when they turn blonde.

Add the peanut butter and honey to the skillet and heat until runny and well combined (just a few seconds). Stir into oat mixture until well combined.

Press into an lightly greased 8x8 glass dish. Store in fridge.

If you were to top these with chocolate, you could pass them off as peanut butter rice krispie bars (or scotcheroos for you weirdos who call them that).

Sure, they are a little on the "dense" side, but it is all pretty darn healthy for ya!

  6. These look so yummy. Are they more crunchy like a nature valley bar or soft? I don't have any of these ingredients but I feel like this would be a good recipe to start investing in things like flax seed. Thanks again.
